VENISON SAUSAGE 
10 lbs. venison (lean), cubed
10 lbs. lean pork, cubed
10 lbs. spuds, peeled and quartered
8 onions, quartered
1 1/2 tsp. white pepper
2 1/2 tsp. allspice
5 tbsp. salt

Grind and mix well. Stuff in casings. Bake in preheated 350 degree oven for 1 hour, turning once. Can also be cooked at a slow rolling boil 1 hour. (From the Jolly Fisher Restaurant, Duluth, MN.)
