ENCHILADA CASSEROLE 
2 lbs. hamburger meat
1 lg. onion
1 lb. Velveeta cheese
1 pkg. corn tortillas (24)
1 can cream of chicken soup
2 cans Ranch style beans
1 can drained Rotel tomatoes or chopped green chilies

Brown hamburger and onion. Line pan with tortillas. Make layers of hamburger, beans and cubed cheese. Add another layer of tortillas, meat, beans and cheese. Add tomatoes and soup on top. Cover with foil and bake at 300 degrees for 1 hour. You can halve this recipe and put in a regular baking dish.
