SUGAR CURE FOR MEAT 
8 qts. of salt
3 qts. of brown sugar
1/4 lb. of black pepper
1 1/2 oz. cayenne pepper
2 oz. of salt peter dissolved in 1/2 glass of warm water

Mix the ingredients in a tub and rub into the meat thoroughly on all sides. Then sprinkle a thin layer of salt on a board or table where the meat is to be laid. After the meat is placed on the board, sprinkle some of the mixture over the meat. After it has laid there for about four weeks, hang it up and smoke it with hickory wood. Serves many.
