SEGOVIAN RED CABBAGE 
2 lbs. red cabbage (firm heads)
1/8 c. cooking oil
2 oz. ham or bacon, diced
2 cloves garlic, minced
2 tsp. paprika
3 tbsp. red wine vinegar

Remove core from cabbage and chop or shred leaves. Set aide. Heat the oil in a heavy skillet and add ham or bacon and garlic. Stir and cook gently for 5-8 minutes. Add the paprika and vinegar and stir. Add cabbage and cook for 10-15 minutes, stirring frequently. Serves 4.
