OLD FASHIONED BREAD PUDDING 
2 eggs, slightly beaten
1/3 c. firmly packed brown sugar
2 c. skim milk
1 tsp. vanilla extract
1/4 tsp. ground cinnamon
4 slices raisin bread, cubed
Vegetable cooking spray

Combine first 5 ingredients, add bread and stir well. Spoon mixture into an 8" square baking dish that has been coated with cooking spray. Place dish in a larger shallow pan; add water to a depth of 1". Bake at 350 degrees for 35 to 40 minutes or until a knife inserted in center comes out clean. Yield: 5 servings. 179 calories per 1/2 cup serving. 7.3 gr. protein, 3.1 gr. fat.
