MASHED POTATO CASSEROLE 
10 potatoes
1 1/2 tsp. salt
1 1/4 tsp. pepper
1 c. warm milk
1 stick butter
1/2 c. heavy cream, whipped
1 c. grated cheese (mild or sharp Cheddar)

Cook potatoes in salted water; whip hot potatoes with salt, pepper, butter and milk until light and fluffy. Pour into buttered 2 1/2-quart casserole dish. Spread with whipped cream and sprinkle with cheese.

Bake in moderate oven at 350°F for about 20 minutes (until lightly brown on top). This recipe serves 8 to 10.
