POPOVERS 
2 well beaten eggs
1 c. milk
1 c. flour
1/2 tsp. salt
1 tbsp. melted shortening or oil

Beat eggs thoroughly with rotary beater or 1/2 minute high speed on mixer. Add milk. Beat to blend. Add flour, salt, and melted shortening to egg mixture. Beat until smooth at low speed on mixer or with rotary beater.

Fill 6 well greased large muffin tins. Bake in very hot oven (475 degrees) 15 minutes. Reduce heat to 350 degrees. Continue baking about 25 to 30 minutes until browned and firm. Prick each popover with a fork to let steam escape. Turn off oven. Leave in oven for 30 minutes if a dry interior is desired. Serve hot with butter, honey, or honey butter.
