PUMPKIN CHEESECAKE 
3 tsp. softened butter
3/4 c. chocolate cookie crumbs
32 oz. softened cream cheese
2 c. dark brown sugar
6 eggs
1/4 c. flour
2 tsp. BLAIR cinnamon
2 tsp. BLAIR allspice
1/2 tsp. BLAIR ginger
1/4 tsp. salt
1 tsp. BLAIR vanilla flavoring
1 (16 oz.) can pumpkin
1 c. sweetened whipped cream
BLAIR nutmeg

Preheat oven to 350 degrees. Combine the butter with cookie crumbs and sprinkle in the bottom of a buttered springform pan. Combine remaining ingredients, except whipped cream in a food processor and whir until well combined. Pour mixture into springform pan and bake 1 1/2 hours or until set. Let cool completely and decorate with the sweetened whipped cream. Sprinkle whipped cream with nutmeg and serve.
