COCONUT SOUR CREAM CUPCAKES 
1 c. sugar
1 c. sour cream
1 egg
2 c. flour
1/2 tsp. baking soda
1 tsp. vanilla
1/2 tsp. salt
1/2 c. shredded coconut
2 tsp. baking powder

Mix sugar, sour cream, and egg; beat for 1 minute. Sift together flour, soda, salt, and baking powder and add to cream mixture. Add vanilla; beat for 2 minutes. Stir in coconut.

Pour into paper cupcake wrappers. Bake at 400 degrees for 20-25 minutes. Very good.

These were so easy and moist and tasty. I made a cream cheese frosting with lemon rind, lemon juice, vanilla extract and blue agave for sweetening. Yummy!

So easy, sooooo good. Not a delicate kind of cupcake but very morish, flavourful and scrumptious. Think coffee cake texture. Frosted it with a whipped cream cheese frosting and topped with a sprinkling of toasted shredded coconut. Absolutely delish.
