HUNGARIAN PLUM PIE (MAGYAR
SZILVAS GYUMOLCS TORTA)
 
1/2 c. butter
1 tsp. baking powder
1/2 tsp. almond extract
1 c. sugar
Fresh purple plums
1 c. flour
2 eggs
1 tsp. cinnamon
2 c. heavy cream
2 tbsp. powdered sugar

Cream the butter until light and fluffy in a warm bowl. Add 1/2 cup of the sugar and 1 egg, beaten thoroughly. Then add the second egg and beat until light. Add the flour, baking powder and a pinch of salt, sifted together and stir until mixed well. Flavor with almonds extract. Spread in a deep buttered square pan. Wash and cut the plums into halves and remove the pits and place in rows over the batter, skin side down and press slightly. Sprinkle top with remaining sugar and cinnamon. Bake in moderate oven for about 30 minutes. Serve cut in squares with cream whipped with powdered sugar on each square.
