GRANDMA LAURA'S LEFSA 
4 c. mashed potatoes
1/2 c. butter
1 tsp. salt
1/4 c. potato water
1/4 tsp. sugar
1/8 tsp. pepper
Later: 2 c. flour

Cook and mash potatoes. While hot pour in melted butter, water, salt and pepper. Mix thoroughly. Chill and cover with a cloth, not plastic. Later add about 2 cups of flour and knead to soft dough. Refrigerate dough in a dry cloth until used.

Roll out using a cloth covered grooved rolling pin and pastry cloth. Bake on a lefsa grill at 475 degrees until lightly brown. Store in a deep dish covered with wax paper and cloth while cooling. Serve with butter and sugar or jam as desired. May freeze.
