EASY RISOTTO | |
1 lb. ground beef 2 (13 oz.) cans chicken broth 1 or 2 medium onions, chopped 3 stalks celery, chopped 1 c. rice or 1 1/2 c. 1 tsp. saffron (threads) or 1/2 tsp. powdered 1 can corn or peas (optional) Saute onion and celery in a little olive oil until tender. Add ground beef; cook until browned. Stir in rice. Add chicken broth and then stir in the saffron. Bring to boil, then cover and reduce heat to simmer until rice absorbs the broth. This dish is best cooked in a large skillet. When the rise is done, at this point you could add the corn or peas or any other vegetables depending on your tastes and enjoy! Bon Apetit! |
