BROCCOLI AND APPLE SOUP 
1 bunch broccoli (1 1/2 lbs.)
3 tbsp. butter
1 sm. onion, thinly sliced
1 medium apple, pared, cored, and diced
4 c. chicken broth
Salt and pepper
Sour cream
Minced chives or parsley

Trim, peel, and wash broccoli and chop. In 4 quart, covered, saucepan, heat butter and cook onion and apple about 10 minutes. Add broccoli and broth. Bring to a boil and simmer for 30 minutes. Place small batches in blender and blend until smooth. Return to saucepan and add salt and pepper; reheat. Top each serving with sour cream.
