POOR MAN STEAKS 
Beef skirts (3 steaks to 1 lb. meat), ask your local butcher
Chopped onion, 1 1/2 c. for 4 lbs. meat
Garlic salt
Salt & pepper
Instant meat tenderizer

Cut beef skirts in 1/2 to 3/4 inch wide long strips. Lay strips out flat and sprinkle with meat tenderizer, salt and pepper, garlic salt and onions. Roll up like pinwheels and secure with toothpick. Grill over hot coals. Can be made ahead and frozen.
