CUCUMBER RELISH 
4 qt. ground cucumbers
5 tbsp. salt
2 qt. ground onions, white
6 c. sugar
6 c. vinegar
2 tsp. turmeric
1 1/2 tsp. ground cloves
2 tsp. mustard seed

Use large firm cucumbers. Peel and grind in a food chopper into coarse bits. Add 4 tablespoons salt and let stand for 2 hours. In another bowl, grind onion and add 1 tablespoon of salt. Let it also stand for 2 hours. In a large kettle, put vinegar, sugar and spices. Bring mixture to a boil. Add cucumbers and onions stirring constantly. Heat or scald but do not allow the cucumbers and onions to boil. Fill jars and can mixture while hot.
