WHITE BEAN SOUP 
2 c. navy beans
1 hambone with meat
1/2 c. cooked mashed potatoes
3 onions, finely chopped
1 celery stalk, chopped, optional
1 clove of garlic, minced
1/4 c. finely chopped parsley

Place the beans and 3 quarts water in a kettle and soak overnight. Add the hambone and enough water to cover and bring to a boil. Reduce heat and simmer for 1 hour. Add the potatoes and stir until well mixed. Remove hambone and cool. Remove meat from bone and chop. Add to soup. Add the onions, celery, garlic and parsley. Simmer for 1 hour.
