SWEET POTATO PIE 
2 c. sweet potatoes, smashed
2 eggs, slightly beaten
1 c. brown sugar
1/2 tsp. salt
1/2 tsp. ginger
1/2 tsp. nutmeg
2 tsp. cinnamon
1 3/4 c. evaporated milk
2 (9-inch) unbaked pastry shells

Cook sweet potatoes until done. Peel and use electric mixer to smash and smooth. Mix ingredients in order given. Pour into pastry shells.

Bake in hot oven (425°F) 15 minutes. Reduce temperature to moderate (350°F) and continue baking 45 minutes or until knife inserted in center comes out clean.
