CHICKEN AND BROCCOLI CASSEROLE 
2 (10 oz.) pkg. frozen broccoli
2 (10 3/4 oz.) cans cream of chicken soup
1 tsp. lemon juice
1 (4 1/2 oz.) can whole mushrooms
1/4 tsp. red pepper
1/2 c. soft bread crumbs
Pimiento strips
2 c. sliced cooked chicken
1 c. mayonnaise
1/2 tsp. curry powder
2 tbsp. chopped parsley
1/2 c. grated cheddar cheese
1 tbsp. melted butter

Cook broccoli according to package directions. Arrange broccoli in a greased 9 x 12 x 2-inch baking dish. Layer chicken over broccoli. Combine soup, mayonnaise, lemon juice, curry powder, mushrooms, parsley and red pepper. Pour this mixture over chicken. Sprinkle with cheese. Combine bread crumbs and butter and sprinkle over casserole. Bake at 350 degrees for 25 to 30 minutes or until thoroughly heated. Garnish with pimiento strips. Serve six.
