GARLIC BROCCOLI SALAD 
1 lg. bunch fresh broccoli
1/2 c. mayonnaise
2 tsp. chopped, fresh garlic
1/2 tsp. salt
1/4 tsp. pepper
Grated rind of 1/2 lemon

Remove heavy stems from broccoli and peel. Cut stems into 1/2" slices. Cut remaining broccoli into bite sized pieces. Cook broccoli in boiling salted water for 4 to 6 minutes or until tender but crisp. Dip broccoli in cold water to stop cooking. Drain and chill. Mix broccoli with remaining ingredients, adding enough mayonnaise to coat broccoli. Chill until ready to serve. Makes 4 servings.
