1 (16 oz.) can sauerkraut, drained 1/4 c. chopped onion 1 tsp. caraway seed 2 c. shredded Swiss cheese 2/3 c. Thousand Island dressing 1/2 lb. cooked corned beef, sliced thin 2 c. rye bread cubes (about 3 slices) 1/4 c. melted butter Butter an 8 inch casserole dish. Combine sauerkraut, onion and caraway seed. Spread over bottom of dish. Sprinkle on half the Swiss cheese, spread on half the dressing and layer on the corned beef. Top with remaining cheese and dressing. Toss bread cubes with melted butter and sprinkle on top. Bake in a 375 degree oven for 35 minutes. Serves 6. |
