DUBLIN CODDLE 
8 thick slices of ham
4 lg. onions
4 tbsp. parsley
2 lb. thick sliced potatoes
8 pork sausages
4 c. water

Place onions, water and potatoes in a heavy casserole. Cover potatoes and onions with ham slices and sausage. Sprinkle parsley on top. Bake at 400 degrees for 1 1/4 hours. For a traditional Irish Sunday meal, serve with soda bread.
