PINEAPPLE YAMS | |
1 c. pineapple juice 1/2 c. brown sugar, packed 1/2 c. granulated sugar 2 tbsp. cornstarch 1/2 cube butter 1 c. drained and crushed pineapple 3 lg. or 6 med. yams, cooked Combine juice, sugar, cornstarch and butter. Bring to boil. Cook 2 additional minutes, stirring constantly. Remove from heat. Add crushed pineapple. Boil unpeeled yams until you can stick fork through them. Slice yams 1/2 inch thick slices. Place in large buttered baking dish. Pour the pineapple sauce over yam slices. Bake 30 minutes at 325 degrees. |
