PEACHES PIQUANT | |
1 (16 oz.) can cling-peach slices 1/4 c. cider vinegar 1 c. sliced green celery 1 tbsp. pickling spices 1 (7 oz.) can or jar pimentos, drained and diced 1. Drain syrup from peach slices into a small saucepan; stir in pickling spices and vinegar. Combine fruit with pimentos and celery in a medium size bowl. 2. Heat syrup to boiling; simmer 10 minutes; strain over peach mixture. 3. Cool, then chill several hours. Makes 3 cups. |
