BROCCOLI MUFFINS 
1 box Jiffy cornbread mix
2 eggs
1 stick butter, melted
1/2 c. sm. curd cottage cheese
1 (10 oz.) pkg. frozen chopped broccoli

Mix all ingredients and put in muffin pan.

Bake at 350-375°F until brown (15-25 minutes, depending upon your oven and the pan). Spinach may be substituted for broccoli. Use only Jiffy Mix.
