ITALIAN MEATLOAF 
1 1/2 lb. lean ground beef
1 egg
3/4 c. cracker crumbs
2 (8 oz.) cans tomato sauce
1/2 c. finely chopped onion
1 tsp. salt
1/8 tsp. pepper
2 c. shredded mozzarella cheese

Combine beef, egg, cracker crumbs, onion, 1/3 cup tomato sauce, salt and pepper. Mix well and shape into flat rectangle about 10 x 12 inches on waxed paper. Sprinkle mozzarella cheese evenly over meat mixture. Roll up like a jelly roll and press ends to seal.

Place in shallow baking dish. Bake at 350 degrees for 1 hour. Drain off excess fat. Pour on remaining tomato sauce with some cheese and bake additional 15 minutes.
