ZUCCHINI BREAD 
3 eggs
1 c. cooking oil
1 c. sugar
1 c. brown sugar
2 c. grated zucchini
2 c. flour
1 c. raisins
1/2 tsp. baking powder
2 tsp. baking soda
3 tsp. cinnamon
1 tsp. salt
3 tsp. vanilla
1 c. chopped nuts

Mix together. Grease and flour 2 small loaf pans, pour in batter. Bake at 350 degrees for 1 hour. Variation: For fruit cake add: 8 oz. candied cherries and 1 lb. fruit and peel.
