ZUCCHINI BREAD 
1 c. walnuts, chopped coarsely
4 eggs
2 c. granulated sugar
1 c. vegetable oil
3 1/2 c. unsifted all-purpose flour
1 1/2 tsp. baking soda
1 tsp. cinnamon
3/4 tsp. baking powder
2 c. unskinned zucchini, grated
1 tsp. vanilla
1 c. raisins (candied fruit may be used instead of raisins)

Beat eggs. Gradually add sugar and oil. Combine dry ingredients and add alternately with grated zucchini. Stir in raisins, nuts and vanilla.

Turn into 2 greased and floured loaf pans 9 x 5 x 2 3/4 inches. Bake 55-60 minutes in a 350 degree oven. Makes 2 loaves. May be refrigerated or frozen.
