PLANTATION CHICKEN STEW 
3 lb. chicken, cut up
3 c. water
1 sm. onion, chopped
1 branch celery, chopped
1 tsp. salt
4 peppercorns
2 c. potatoes, cubed (or 1 c. macaroni)
10 oz. pkg. lima beans
1 c. onions, chopped
15 oz. can tomato sauce
10 oz. pkg. frozen corn
1/2 tbsp. salt
1/4 tbsp. pepper
1/8 tbsp. oregano
1/8 tbsp. poultry seasoning

Combine cut-up chicken, water, small onion, celery, salt and peppercorns. Cover and simmer about 50 minutes. Strain broth and remove chicken from the bones. Discard skin, onion and celery. Skim off some of the fat. Add potatoes, lima beans and the cup of chopped onions to broth. Cover and simmer for 20 minutes. Add tomato sauce, chicken, corn, 1/2 tablespoon salt, pepper, oregano and poultry seasoning. Simmer 10 to 15 minutes until vegetables are tender. Serves 6 hungry people.
