CHICKEN AND BROCCOLI CASSEROLE | |
2 cans cream of chicken soup 1 c. Hellmann's mayonnaise 1 3/4 c. shredded Cheddar cheese Dash lemon juice 1 tsp. curry powder 8 chicken breasts 1 tbsp. salt (optional) 1/2 c. parsley flakes 2 tbsp. chopped onion Dash Worcestershire sauce 1/2 tsp. red pepper 1 tsp. celery salt 1 tsp. garlic powder 2 pkgs. frozen broccoli (10 oz. each) Combine and put in refrigerator: cream of chicken soup, mayonnaise, 3/4 cup shredded cheese, lemon juice and curry powder. Cover chicken breasts with water. In water put salt, parsley flakes, chopped onion, Worcestershire sauce, red pepper, celery salt and garlic powder. Cook with lid on for 30 minutes or until done. Save broth. Debone chicken and slice or cut up. In the broth saved cooked frozen broccoli, according to directions on package. Butter oblong baking dish and put broccoli on the bottom of the dish. Then place the chicken on top of the broccoli. Pour the cream of chicken soup mixture on top of this. Grate 1 cup cheese and spread on top. Cook in preheated 350 degree oven for 30 minutes or until bubbly. Yield: 8 servings. |
