ITALIAN CREAM CAKE | |
1/2 c. butter 1/2 c. shortening 2 c. sugar Cream above together. 5 egg yolks Add one egg yolk at a time. 1 tsp. baking soda 1 c. buttermilk Dissolve baking soda and buttermilk together. 2 c. flour, sifted 2 times Add buttermilk and flour alternately to mixture. 1 (3 1/2 oz.) can coconut (1 1/3 c.) 1 c. chopped nuts 1 tsp. vanilla 1 tsp. coconut flavor Add above ingredients. Fold in: 5 egg whites, stiffly beaten Recipe calls for 3 (9 inch) round pans (2 cups batter in each). Can substitute 9 x 13 inch pan and 8 inch square pan. Bake at 350 degrees, small pan for 25 minutes, large pan 35+ minutes. FROSTING: 1 (8 oz.) pkg. cream cheese 1/2 c. butter 1 (1 lb.) box confectioners' sugar 1 tsp. almond extract Combine. |
