MEXICAN CORN - ZUCCHINI DISH 
1 lb. sm. zucchini, thinly sliced
4 to 5 med. sized ears of corn
3/4 c. finely chopped onion
1/3 c. chopped green pepper
3 med. sized tomatoes, chopped & peeled
2 tbsp. oil
1/4 tsp. sugar
1 tsp. salt
1/4 tsp. ground pepper
1 tsp. cumin
1 1/2 c. diced stale bread
1/2 c. diced sharp cheese

Cut corn off the cob (you should have 2 1/2 to 3 cups). combine zucchini, corn, onion, green pepper, tomato, oil, sugar, salt, pepper, and cumin in a casserole. Cook gently over medium heat for 10 to 12 minutes or microwave on high for 5 to 6 minutes.

Sprinkle vegetables with bread and cheese cubes. Bake in preheated 350 degree oven until cheese melts and the bread is crisp. 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
