YOGURT MUFFINS 
1/2 c. melted butter
1 (8 oz.) c. any flavor yogurt (I like pineapple)
3/4 c. sugar
1 egg
2 c. plain flour
1/2 tsp. baking soda

Mix well and spoon into lightly greased muffin pans. Bake at 375°F for 20 minutes.

Makes 12-18 muffins.

I made this recipe with strawberry yogurt and I added a cup of cut up fresh strawberries then I added a tsp of strawberry seedless jam, they turned out excellent!!!! Love these muffins!!

Thanks for the great recipe! I cut the sugar out completely since the Yogurt is already sweet. But added 1/2 cup of chocolate chips. Instead of butter, i used only 1/4 cup of Olive oil. It came out beautiful.

I added zest of one lemon, 1/2 cup each of blueberries and raspberries *frozen and crumbled the raspberries to avoid large chunks* and used blueberry and raspberry individual yogurts (3 x 100G) to make the recipe. Fluffy, browned, balanced and delicious :)

I used plain yogurt and they not only made good muffins but they make excellent pancakes. I put honey over them and everyone ate them all gone

Made these today with lemon-flavored yogurt. The recipe was super simple to mix up -- I only used one bowl -- but the muffins are pretty basic. Next time I will add zest or fruit to amp up the taste.
