REGULAR PANCAKES 
1 egg
1 c. flour
3/4 c. milk
2 tbsp. oil
1 tbsp. sugar
3 tsp. baking powder
1/2 tsp. salt

Mix ingredients and brown in a skillet.

VARIATIONS:

APPLESAUCE PANCAKES - Decrease milk to 1/2 cup, beat in 1/2 cup applesauce and 1/4 teaspoon cinnamon.

BANANA: Beat in 1 medium banana and 1/4 teaspoon nutmeg.

BUTTERMILK: Substitute 1 cup buttermilk for milk. Decrease baking powder to 1 teaspoon and beat in 1/2 teaspoon baking soda.

RYE: Substitute 1/2 cup rye for 1/2 cup regular flour. Use 1 cup milk.

MICROWAVE REHEAT: 1 pancake if frozen - 35 to 45 seconds. 4 pancakes if frozen - 2 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
