SWEET POTATO PUDDING 
1 1/2 c. boiled sweet potatoes, mashed
2 eggs, beaten
1/2 c. sugar
1/2 tsp. vanilla
4 tbsp. butter, melted
1/4 tsp. salt
1 c. milk
1/2 tsp. cinnamon
1/2 tsp. ginger
1/8 tsp. nutmeg
1 tbsp. grated lemon rind

Blend eggs into sweet potato pulp, then sugar, vanilla, melted butter, salt, and milk. Stir in spices and grated rind. Pour into a buttered casserole dish. Cover dish and bake at 325 degrees for 45 minutes. Remove cover and bake 15 minutes longer.
