FUNNEL CAKES | |
Salad oil 1 c. all-purpose flour 3/4 c. milk 1 tsp. double acting baking powder 1/8 tsp. salt 1 egg Confectioners sugar 1. In 12 inch skillet over medium heat about 3/4 inch salad oil to 370 degrees F. on deep fat thermometer (or heat oil in electric skillet set at 370 F.) 2. Meanwhile, in a medium bowl with wire whisk or fork, mix flour, milk, baking powder, salt and egg. 3. Holding a narrow spouted funnel (1/2 inch spout) close spout with finger; pour scant 1/4 cup batter into funnel. Over hot oil, carefully remove finger to let the batter run out in a stream, while making spiral about 6 inches in diameter. Fry 6 to 8 minutes until golden brown, turning once with tongs. Drain well on paper towels. Repeat with remaining batter; stir well before pouring. 4. Sprinkle cakes lightly with confectioners sugar; serve warm. Makes 6 funnel cakes or 6 servings. |
