CHEESE CRISPIES 
1 c. butter, softened
2 c. all-purpose flour
2 c. shredded sharp Cheddar cheese
1 tsp. salt
1/2 tsp. cayenne pepper
3 drops hot pepper sauce
1/2 c. grated Parmesan cheese
1 c. crisp rice cereal

In a large mixing bowl, combine all ingredients. Stir by hand until well blended. Wrap dough in plastic wrap and chill 30 minutes.

Preheat the oven to 325°F. Form dough into 1-inch balls and place on lightly greased baking sheet. Using a fork dipped in flour, flatten each ball in a crisscross pattern.

Bake 12 to 15 minutes, or until lightly browned. Remove from pan and cool on wire rack. Store in airtight container.

Yields: about 6 dozen crispies.
