BEEF STROGANOFF 
2-2 1/2 lbs. steak

Top sirloin or round steak - round steak needs to simmer 2 1/2-3 hours to be tender enough.

2 lbs. fresh mushrooms, sliced
2 onions, chopped
3 cans beef consumme soup, undiluted
1 lg. and 1 sm. carton sour cream
1 pkg. extra wide egg noodles

Trim fat off steak and cut into bite size strips. Coat with flour and fry in hot oil to brown all sides. Make sure meat is coated heavy with flour so sauce will be thick. Drain any excess oil from meat. In separate pan, saute mushrooms and onion in butter; drain.

Add beef consumme soup to meat and stir in mushroom and onions. Let simmer at least an hour, but longer is better (round steak definitely needs a lot longer). When meat is almost done, boil egg noodles until done. Stir sour cream into meat mixture and serve over noodles.
