SALMON SALAD IN TOMATO CUPS | |
1 can salmon, skin and bones removed 1 tbsp. lemon juice 6 hard cooked eggs, sliced 1/3 c. celery, chopped 1/3 c. salad dressing or mayonnaise 2 tbsp. sweet pickle relish 1/2 tsp. salt and dash of pepper 1/2 tsp. dried dill weed 6 med. tomatoes Lettuce Sprinkle salmon with lemon juice and mix with all remaining ingredients except the tomatoes and lettuce. Turn the tomatoes end down and cut each to - but not through - the bottom. Sprinkle the cut surface with salt and spread edges apart slightly. Spoon salmon mixture into the tomato cups and serve on lettuce beds. |
