OATMEAL BARS 
1 1/2 c. raisins
1 c. orange juice
1 c. coarsely shredded carrots
1 tbsp. lemon juice
2 c. quick oats
3/4 c. brown sugar
1 c. flour (unsifted)
1 tsp. baking soda
1/2 tsp. salt
1 tsp. ground cinnamon
3/4 c. oil
2 egg whites (or 1 whole egg, lightly beaten)

Oil 9 inch square pan; set aside.

In a small saucepan combine raisins, orange juice, carrots and lemon juice. Bring to a boil. Reduce heat, simmer uncovered stirring occasionally until mixture thickens, about 15 minutes. Remove from heat, set aside until cool.

Preheat oven 350 degrees. In a medium bowl combine oats, brown sugar, flour, baking soda, salt, cinnamon and oil. Stir in eggs. Press half of mixture into prepared pan. Spread reserved cooled raisin mixture on top. Press remaining oat mixture on top of raisin mixture. Bake until firm, 30-35 minutes. Cool on wire rack and cut into bars. Very good.
