ZUCCHINI CASSEROLE 
3 c. zucchini, cut in bite sizes
1 carrot, shredded
1 sm. onion, grated
1 can cream of chicken soup
1/2 c. sour cream
2 c. stuffing mix (herb seasoned)
1/3 c. melted butter

Lightly cook zucchini and drain. Mix stuffing mix with melted butter. Mix rest of ingredients. Put in casserole and bake 25 minutes, 350 degree oven, or until bubbly.
