BEEF STEW 
1 c. dry white beans
5 c. boiling water
2 tbsp. peanut oil
1 lb. stew beef, cubed
1 lg. onion, coarsely chopped
2 lg. potatoes, peeled and cubed
3 ribs celery, cut in bite sized pieces
3 med. carrots, scraped and cut in bite sized rounds
1 c. fresh corn
1 tsp. curry powder
1 1/2 tsp. salt
1/2 lb. fresh Brussels sprouts

Place dry beans and 4 cups boiling water in soup kettle over high heat. Boil 2 minutes. Remove from heat and let stand covered 1 hour. Return beans to heat and heat and simmer, in same water, 1 hour. Heat oil in a skillet. Brown meat, add onion and cook until golden. Add meat onion mixture, potatoes, celery, carrots, corn, curry powder and salt to beans. Add remaining boiling water. Place kettle over low heat and simmer 1 hour. Add Brussels sprouts. Continue simmering 15 minutes longer.
