CARROT-PINEAPPLE BREAD 
3 eggs
2 c. sugar
2 c. grated carrots
Sm. can crushed pineapple (8 1/4)

Add:

1 1/2 c. oil
1 c. chopped nuts
3 tsp. vanilla
3 c. flour
1 tsp. salt
2 tsp. cinnamon

Beat eggs, add sugar, add oil, and mix flour with salt, soda and spices. Bake at 350 degrees for 50 minutes. Test with a toothpick. Makes 2 regular size bread pans, or 4 small ones. Really good.
