ZUCCHINI SPAGHETTI SOUP | |
1 med. onion, minced 1 clove garlic, minced 1/4 c. olive oil 4-4 1/2 c. sliced zucchini, thin slices 1 tomato, chopped or 1/4 c. tomato sauce 1/2 tsp. basil 1/4 tsp. pepper 6 c. chicken broth, or 6 bouillon cubes & 6 c. water 1 1/4 c. uncooked spaghetti, broken in thirds Saute onion and garlic in olive oil in large saucepan. Add zucchini, tomato, seasonings and chicken broth. Cover, simmer over low heat 1 1/2 hours. Add short lengths of spaghetti and continue simmering another 10 minutes or until spaghetti is done. |
