ZUCCHINI CHEESE CASSEROLE 
3 c. zucchini, grated (1 3/4 lbs.)
1 sm. onion, chopped
1 tbsp. parsley, chopped
1/2 c. Cheddar cheese, grated
1/2 c. Parmesan cheese
1/2 c. salad oil
1 c. Bisquick

Combine all ingredients, then add 4 beaten eggs. Pour into greased 8 x 8 inch pan. Bake 45 minutes at 350 degrees until golden brown. Freezes nice. Good cold. Serves 4 to 6.
