APPLE PANCAKE | |
PANCAKE: 4 tbsp. butter 4 eggs 1 c. milk 1 c. flour 1 tsp. sugar 1/2 tsp. salt APPLES: 1 tbsp. butter 1 tbsp. sugar 3 Golden Delicious apples, thinly sliced 1/2 tsp. cinnamon 1/4 tsp. nutmeg GARNISH: (OPTIONAL): 1/4 c. apricot jam, warmed 1/4 c. sliced almonds, toasted 2 tsp. powdered sugar PANCAKE: Preheat oven to 425 degrees. Put butter into a 10 1/2 inch heavy skillet, preferably cast iron. Put into the oven to melt and heat while mixing the batter. Put eggs in blender or food processor and mix for 1 minute. Keep machine running and gradually add milk. Stop machine. Combine flour, sugar and salt; add gradually to egg mixture. Continue blending 45 seconds. When butter is bubbling, pour batter into hot pan. Return quickly to oven and bake for 20 minutes. Pancake will rise up on sides and middle, when removed from oven pierce the middle so that the pancake falls slightly. APPLES: In a skillet, melt the butter and sugar together over medium heat. Add the apples, cinnamon and nutmeg. Saute until softened and caramelized. Remove the pancake from the oven. Spread with the warm apricot jam and sprinkle with almonds. Spoon apples into pancake and sprinkle with powdered sugar. |
