APPLE PASTRY SQUARES 
2 1/2 c. sifted flour
1 tbsp. sugar
1 tsp. salt
1 c. lard
1 egg, separated
Milk

I make 1 1/2 recipe.

Sift together flour, sugar and salt. Cut lard in with pastry blender until like coarse meal. Beat egg yolk in measuring cup and add milk to make 1/2 cup. Add to lard mixture; mix just enough so dough shapes into ball. Roll out half to 15"x11" rectangle transfer to baking sheet. Spread evenly with filling. Place top dough and seal edges. Beat egg whites until stiff. Spread on top crust. Bake 400 degrees for 25 to 30 minutes. Mix confectioners' sugar and lemon juice, drizzle over top of crust while hot.

FILLING:

3 c. sliced apples
1 c. sugar
4 tbsp. cornstarch dissolved in 1/2 c. water
1 tsp. cinnamon, or to your taste

Put filling ingredients in saucepan and cook until thick. Cool. Spread over bottom crust.
