POTATO TOMATO POT 
2 med. potatoes, cut up
1 med. tomato, cut up
1 med. onion, sliced
3/4 tsp. salt
Dash freshly ground pepper
1 tbsp. olive oil

In a small baking dish, toss vegetables, salt and pepper with oil. Cover and bake at 350 degrees for 30 minutes. Uncover and bake 30 minutes more or until potatoes are tender. Makes four 90 calorie servings.
