LEMON PECAN PIE 
1 1/2 c. sugar
1 tbsp. flour
4 beaten eggs
1/4 c. butter, melted
1/4 tsp. salt
1 tbsp. cornmeal
1/4 c. cream
Grated rind of 1 lemon
Juice of 2 lemons
1 c. pecans
1 9" pie shell, unbaked

Combine sugar, salt, flour and cornmeal. Beat eggs for 2-3 minutes. Add cream, melted butter, lemon juice and rind. Add to first mixture and beat well. Stir in pecans. Pour into pie shell and bake at 350 degrees for 40 minutes.
