APPLE RAISIN CRISP 
1/2 c. all-purpose flour, sifted
1 tsp. baking powder
1/2 c. sugar
1 tsp. cinnamon
1 egg, slightly beaten
1 tbsp. lemon juice
1 tsp. almond extract
4 c. apples (4 to 6 medium, chopped)
1/2 c. raisins

Sift together flour, baking powder, sugar and cinnamon. Combine beaten egg, lemon juice and almond extract. Add apples and raisins. Add dry ingredients and mix well. Turn into well greased 9x9x2-inch pan. Sprinkle topping (see below) over apple mixture in pan and bake at 375°F for 30 to 35 minutes.

Topping:

1/2 c. all-purpose flour, sifted
1/4 c. white sugar
1/4 c. brown sugar, packed
1 tsp. cinnamon
1/4 tsp. salt
1 tsp. lemon rind, grated
1/4 c. (1/2 stick) butter

Combine flour, sugars, cinnamon, salt and lemon rind. Cut in the butter until mixture resembles coarse meal.
