BEEF AND RICE CASSEROLE 
1 1/3 c. minute rice
2 tbsp. butter
1 1/3 c. diced celery
3 tbsp. minced onion
1 lb. ground beef
1 can tomato soup, undiluted
1 tsp. salt
Dash pepper
1/4 c. water

Cook rice. Meanwhile saute celery and onion in butter until tender; place rice in greased 1 1/2 quart casserole; top with celery mixture. Season beef with salt and pepper. Brown in remaining butter. Arrange on top of celery.
